Beet Burger
Servings: 6 servings
Ingredients
- 1 cup finely shredded raw beet
- 1 cup cooked short grain brown rice
- 1 cup cooked black beans
- 1 cup finely chopped walnuts
- Half cup bread crumbs
- 2 tablespoons BBQ sauce
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- Half cup chopped onions
- 2-3 minced garlic cloves
- 1-2 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Sauté onion and garlic with 1 tablespoon oil.
- Add all ingredients except remaining olive oil to a big bowl.
- Mash and Mix with a masher.
- You can bake the patty in the oven or fry it in a pan. Take a handful and shape into a patty, place on a baking sheet, and brush with oil.
- Bake 350ºF for about 20 minutes OR Fry in a pan with 1 tablespoon of oil for about 10 minutes.
- Simple suggested topping: basil, pickles, tomatoes, lettuce, ketchup, and mustard.
