  • 1 cup finely shredded raw beet
  • 1 cup cooked short grain brown rice
  • 1 cup cooked black beans
  • 1 cup finely chopped walnuts
  • Half cup bread crumbs
  • 2 tablespoons BBQ sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • Half cup chopped onions
  • 2-3 minced garlic cloves
  • 1-2 tablespoon olive oil
  • Salt and pepper to taste


  • Sauté onion and garlic with 1 tablespoon oil.
  • Add all ingredients except remaining olive oil to a big bowl.
  • Mash and Mix with a masher.
  • You can bake the patty in the oven or fry it in a pan. Take a handful and shape into a patty, place on a baking sheet, and brush with oil.
  • Bake 350ºF for about 20 minutes OR Fry in a pan with 1 tablespoon of oil for about 10 minutes.
  • Simple suggested topping: basil, pickles, tomatoes, lettuce, ketchup, and mustard.
