  • 3 cups brussels sprouts
  • 1 cup onion
  • cup tahini
  • ¼ cup balsamic vinegar
  • 1 cup croutons
  • salt and pepper to taste
  • handful of parsley


  • Cut ends of brussels sprout and thinly slice.
  • Cut onion in half and thinly slice.
  • Mix all ingredients in a baking dish.
  • Cover with foil.
  • Bake in the oven at 400°F for 45 minutes. Remove the foil for the last 5 minutes of baking.
  • Top with more parsley before serving.
