Ingredients

  • 4 cups sliced & frozen bananas
  • ¼ cup almond milk
  • ¼ cup vegan chocolate chips
  • Fresh raspberries

Instructions

  • Using a high-speed blender, mix the banana with almond milk until creamy (add more almond milk only if needed to help blend and use as little as possible or none if your blender will allow it).
  • Melt the chocolate chips in the microwave or stove-top (be careful not to burn).
  • Transfer the nice cream to a serving bowl and add the melted chocolate on top (you can put it in the freezer for a few minutes for the shell to harden faster).
  • Serve with a lot of raspberries!

Ingredients

  • ½ cup raw cashews
  • cup nutritional yeast
  • 2 garlic cloves
  • ½ tsp turmeric powder
  • ½ tsp chili paste
  • 1 tsp salt
  • 4 ½ cup water
  • 4 cups elbow macaroni

Instructions

  • Blend the cashews (no need to soak if you are using a high-speed blender), nutritional yeast, garlic, turmeric powder, chili paste, salt, with water in a blender.
  • Pour in pot and heat for 2 minutes.
  • Add the elbow macaroni and keeping stirring for about 5-7 minutes until they are al dente.
  • Serve right away!

  • 1 ½ cup shredded potato
  • ¼ cup bread crumbs
  • ½ cup chickpea flour
  • 1 medium onion chopped
  • ½ cup chopped parsley
  • 1 tsp turmeric

Instructions

  • In a bowl, mix all ingrediants together.
  • Take ⅓ cup of the mixture and press it into a ball, then flatten out with your hands.
  • Fry in a non-stick pan until golden (5-10 minutes on each side).

Ingredients

  • One medium cauliflower

For dry mixture

  • 1 cup bread crumbs
  • cup oregano

For wet mixture

  • cup chickpea flour
  • 1 tbsp nutritional yeast
  • 1 tsp paprika
  • ½ tsp baking powder
  • Salt and pepper
  • 1 cup almond milk

Instructions

  • Mix the ingredients from the dry mixture list and set them aside.
  • Mix the ingredients from the wet mixture list and set them aside.
  • Remove the stem and leaves from the cauliflower. Snap the cauliflower into small pieces.
  • Coat the cauliflower with the wet mixer, then coat the cauliflower with the dry mixer.
  • Bake in the oven at 400°F for 20-25 minutes.
  • Top with chopped parsley!

  • In a bowl, mix the dry ingredients with a fork.
  • Add the water and mix well. Then add all the veggies.
  • Pre-heat your waffle iron, add a scoop of the mixture and cook until golden.
  • Top with ketchup or BBQ sauce!

Ingredients

  • 4-6 medium potatoes
  • ½ cup soaked cashews
  • ½ cup water
  • 2 tbsp Ketchup
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • cup finely chopped pickles
  • ½ cup chopped caramelized onions

Instructions

  • Peel and cut the potatoes into thin sticks. Wash them before air frying to remove the excess starch, then drain and pat dry with a towel.
  • In a bowl, add the fries, a tsp oil (optional), and ½ tsp of salt (optional).
  • Place fries in the basket of the air fryer and cook for 15-20 minutes at 390°F tossing the potato wedges in the basket halfway through.
  • Meanwhile, blend the cashews in the blender with the water.
  • Pour the cashew cream into a small bowl and mix in the ketchup, onion powder, garlic powder, salt, pickles, and onions.
  • Pour the sauce over the fries and enjoy!

Notes

  • Keep the sauce in the refrigerator for up to a week!

    Ingredients

    BBQ Jackfruit

    • 20 oz can young green jackfruit in water NOT in syrup or brine
    • 1 tbsp olive oil
    • ½ sliced onion
    • 3-4 minced garlic cloves
    • 1 tsp paprika
    • 1 tsp garlic powder
    • ½ tsp salt
    • ½ tsp pepper
    • ½ tsp chili powder
    • ½ tsp turmeric powder
    • ¾ cup BBQ sauce
    • 2-4 burger buns

    Coleslaw

    • 4 cups shredded cabbage
    • 1 cup grated carrots
    • cashew sauce blend ½ cup soaked cashews with ¼ cup water, salt, 1 tsp garlic powder, and juice from one lemon
    • 2-4 big pickles

    Instructions

    • Drain and rinse the jackfruit from the can and set it aside.
    • Chop off the center “core” portion of the fruit and discard (optional).
    • Sauté the onion and garlic with the oil.
    • Add the jackfruit and seasoning one at a time.
    • Stir and reduce heat to low and cook for about 20 minutes (make sure to close the lid).
    • In the meantime, make the coleslaw by adding all ingredients. Set in the refrigerator until serving.
    • Toast the buns. Place generous portions of BBQ jackfruit on the bottom buns, top with a generous serving of coleslaw. Serve with extra BBQ sauce and pickles!
    • Serve with pickles and/or extra BBQ sauce (optional)!

    • ½ cup popcorn kernels
    • ¼ cup oil
    • ¼ cup nutritional yeast

    Instructions

    • Remove from heat when there are a few seconds between pops.
    • Meanwhile in a bowl, combine all spices, add popcorn and toss thoroughly before serving.

    Ingredients

    • ½ cup vegan melted butter melted
    • 1 cup granulated sugar
    • 1 cup brown sugar
    • 4 tbsp ground flax mixed with 8 tbsp of water
    • 1 tbsp pure vanilla extract
    • 1 cup all-purpose flour
    • 1 cup unsweetened cocoa powder
    • 1 tsp baking powder
    • ½ tsp salt
    • 1 cup vegan chocolate chips

    Instructions

    • Melt the vegan butter, and measure ½ cup. I do this by microwaving the vegan butter in a glass measuring cup, in 30-second intervals, until melted.
    • In a large bowl, whisk the melted vegan butter and sugars together. Add the flax eggs and vanilla, whisk until evenly combined.
    • Over the same large bowl, sift in the flour and cocoa powder. Add the salt and baking powder and stir with a large wooden spoon until just combined, do not over mix.
    • Fold in half of the chocolate chips. Pour the batter into a lined 7 x 11 pan with parchment paper and smooth out the top with a spoon or your hands. Sprinkle the rest of the chocolate chips on top of the batter.
    • Bake 350 degrees F for 35-40 minutes. The brownies may still be bubbling and not look done, but they will firm up a lot as they cool.
    • Let cool in the pan for at least 20-30 minutes.

    • 2 tbsp extra virgin olive oil
    • 6 chopped garlic cloves
    • 12 medium medium tomatoes
    • ½ tbsp sea salt

    Instructions

    • Boil the tomatoes in water until the skin peels back.
    • Sauté garlic with the olive oil until golden.
    • Add the peeled tomatoes.
    • Simmer the sauce for 20 minutes.
    • Crush the tomatoes with a spoon.
    • Add sea salt.
    • Enjoy with your favorite pasta!
