  • 1 cup chickpea flour
  • 2 tbsp nutritional yeast
  • ½ tsp baking powder
  • ½ tsp turmeric powder
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp white pepper
  • 1 ½ cups of water
  • 1 tbsp olive oil

Veggie filling

  • 2 big chopped tomatoes
  • 1 medium chopped onion
  • 2-3 cups fresh spinach


Chickpea Omelet

  • Chop some herbs like parsley, cilantro, or chives equal to half a cup.
  • Add all dry ingredients to a bowl and mix with a fork.
  • Then add herbs and water and mix well.
  • Heat your nonstick pan with some oil and add ⅓ of the batter.
  • Cook both sides until golden (about 15 minutes on each side).

Veggie Filling

  • Sauté onions in another pan for a few minutes then add tomatoes but don’t overcook.
  • Lastly, add spinach and cook for under a minute.
  • Assemble the omelet any way you like with vegetables in the middle or on top.
