  • 3 tbsp olive oil or vegan butter
  • 6-8 chopped shallots
  • 1 cup chopped parsley
  • cup apple cider vinegar
  • tsp red pepper flakes optional
  • ½ tbsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 minced garlic cloves
  • 1 tbsp nutritional yeast
  • add 250 grams of cooked spaghetti


  • Add all ingredients except the pasta to a serving bowl and mix well.
  • Add the cooked spaghetti to the bowl right when you drain off the water (you can keep about ½ cup of the pasta water if the pasta seems dry when mixing in with the other ingredients).
