Ingredients

Vegetables

  • 2 medium baked potatoes
  • 1 cup cooked chickpeas
  • 1/2 cup chopped celery
  • 1/2 cup chopped green onions
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped pickles
  • 5 chopped dill stems
  • 2 minced garlic cloves

Sauce

  • Cashew cream blend 1 cup soaked cashews with 1/3 cup water
  • 1 tablespoon mustard
  • 1 tablespoon maple syrup
  • 1 lemon juiced
  • Sat and pepper to taste

Instructions

  • Chop the potatoes, mash the chickpeas, and add to a bowl along with all the other ingredients.
  • Blend all the sauce ingredients.
  • Mix all ingredients and add to your favorite bread!
