Potato Salad

Ingredients
Vegetables
- 2 medium baked potatoes
- 1 cup cooked chickpeas
- 1/2 cup chopped celery
- 1/2 cup chopped green onions
- 1/2 cup chopped cucumber
- 1/2 cup chopped pickles
- 5 chopped dill stems
- 2 minced garlic cloves
Sauce
- Cashew cream blend 1 cup soaked cashews with 1/3 cup water
- 1 tablespoon mustard
- 1 tablespoon maple syrup
- 1 lemon juiced
- Sat and pepper to taste
Instructions
- Chop the potatoes, mash the chickpeas, and add to a bowl along with all the other ingredients.
- Blend all the sauce ingredients.
- Mix all ingredients and add to your favorite bread!
