Vegan In-N-Out Burger

Ingredients
Patty ingredients:
- 1 cup mushrooms cut in quarters
- 1 cup cooked black beans
- 1 cup cooked quinoa
- ½ cup bread crumbs
- ⅓ cup chopped walnuts
- 1 chopped and caramelized onion
- 4 garlic cloves
- 1 tbsp BBQ sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp coco aminos
- 1 tsp tomato paste
- 1 tsp smoked paprika
- ½ tsp turmeric powder
- ½ tsp chili powder
- Salt and pepper to taste
In-N-Out sauce (you might want to make two batches):
- ½ cup soaked cashews
- ½ cup water
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- 2 big finely chopped pickles
- 2 tbsp Ketchup
- 2 tbsp chopped caramelized onions
Instructions
- To a food processor, add all the patty ingredients and pulse into a loose meal (you want it mixed well, some texture is good – don’t over-mix into a soft dough).
- Form into patties with your hands. You want a relatively thin patty.
- Cook the patties with a bit of oil in a pan for about 5 minutes on each side until crispy.
- Meanwhile, make the sauce. Blend the cashews in the blender with the water and spices. Pour into a small bowl and mix in the ketchup, pickles, and onions.
