Patty ingredients:

  • 1 cup mushrooms cut in quarters
  • 1 cup cooked black beans
  • 1 cup cooked quinoa
  • ½ cup bread crumbs
  • cup chopped walnuts
  • 1 chopped and caramelized onion
  • 4 garlic cloves
  • 1 tbsp BBQ sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp coco aminos
  • 1 tsp tomato paste
  • 1 tsp smoked paprika
  • ½ tsp turmeric powder
  • ½ tsp chili powder
  • Salt and pepper to taste

In-N-Out sauce (you might want to make two batches):

  • ½ cup soaked cashews
  • ½ cup water
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • 2 big finely chopped pickles
  • 2 tbsp Ketchup
  • 2 tbsp chopped caramelized onions


  • To a food processor, add all the patty ingredients and pulse into a loose meal (you want it mixed well, some texture is good – don’t over-mix into a soft dough).
  • Form into patties with your hands. You want a relatively thin patty.
  • Cook the patties with a bit of oil in a pan for about 5 minutes on each side until crispy.
  • Meanwhile, make the sauce. Blend the cashews in the blender with the water and spices. Pour into a small bowl and mix in the ketchup, pickles, and onions.


  • Build the burger: There’s an important first step!
  • 1- Toast the bun (we used whole-wheat buns) in a pan with a little vegan butter: Split the bun open, place it cut side down in the pan, until golden brown, about a minute.
  • 2- Add the sauce on the top or bottom bun.
  • 3- Add sliced pickles, tomatoes, onions, and lettuce. You can add ketchup (optional).
