Chipotle’s Honey Vinaigrette

🌶️ 2 chipotle peppers in adobo sauce (3 tbsp)
🍯 2 1/2 tbsp honey (vegan option is 3 tbsp maple syrup)
🍇 1/4 cup red wine vinegar

How You’ll Make It
- In a blender, combine the red wine vinegar, honey, chipotle peppers (with some of the adobo sauce), salt, and water.
- Blend on high for 20 seconds, or until smooth.
- With the blender running, slowly drizzle in the oil to create a thick, creamy emulsion.
- Once fully blended, add the black pepper and oregano. Pulse a few times to incorporate them.
- Taste the vinaigrette and adjust the seasoning if needed. Add more salt, vinegar, honey, or chipotle peppers to balance the flavors.
- Transfer the vinaigrette to an airtight container and refrigerate. It will keep for up to 5 days.
