🌶️ 2 chipotle peppers in adobo sauce (3 tbsp)

🍯 2 1/2 tbsp honey (vegan option is 3 tbsp maple syrup)

🍇 1/4 cup red wine vinegar

🛢️ 1/2 cup neutral-flavored oil

🌿 1/4 tsp dried oregano

🧂 1/2 tsp ground black pepper

How You’ll Make It

  1. In a blender, combine the red wine vinegar, honey, chipotle peppers (with some of the adobo sauce), salt, and water.
  2. Blend on high for 20 seconds, or until smooth.
  3. With the blender running, slowly drizzle in the oil to create a thick, creamy emulsion.
  4. Once fully blended, add the black pepper and oregano. Pulse a few times to incorporate them.
  5. Taste the vinaigrette and adjust the seasoning if needed. Add more salt, vinegar, honey, or chipotle peppers to balance the flavors.
  6. Transfer the vinaigrette to an airtight container and refrigerate. It will keep for up to 5 days.
